Make a standard sphere. Enter UV Editor in 7.5.

Now pick a UV piece and move it a bit. Switch to Modeler, and do the same here. Do it a few times. NOte: i do nothing else than picking this area again and again and move it a bit around. One time in WS UV Editor, one time in Modeler UV Mapping Editor.

As another sidenote: the blue texture had formerly the name blue.bmp. But that's another bug ...

By switching between Modeler and Workspace, and working at the UV areas the UV space gets destroyed. Which makes the UV Editor useless. Because you need to use the Modeler to save your stuff. And so you have to switch between WS and Modeler.

It looks like having both uv editors open at the same time might be the problem. I couldn't reproduce the strangeness unless both were open at the same time.

Create a worskspace sphere.

use uv editor on it and leave editor open

switch to model side and start uv editor and see the workspace selection change.

I think the best practice would be to not have them open at the same time.
